Happy Campers Holiday Stuffing Recipe!

Happy Campers Bakers | Posted November 18, 2015

Well, it’s that time of year again! Whether you stuff your turkey, or you stuff yourself, we hope these recipes should put a smile on your face and in your belly! Wherever you are, we wish you the happiest (and tastiest) of holidays! 🙂

How to Make Happy Campers Gluten-Free Stuffing

1.  Cut slices of your favorite flavor(s) of Happy Campers bread into ½-1″ pieces.

2.  Spread the bread cubes in a single layer on a large rimmed baking sheet.

3.  Bake the bread cubes at 400ºF on the center oven rack until nice and toasty, 12-15 minutes. (45 minutes at 225º also works.)

TIP: For the tastiest stuffing, let your Happy Campers bread dry overnight so it can absorb all the other delicious flavors that make it stuffing; toasting the bread also boosts flavor. (Remember to prepare  this at least a day before!)

You can’t go wrong with this classic! So tasty with savory sage and olive oil that you’ll want to stuff yourself with it!

  • 1 loaf’s worth of Classy Slice or Hemp Hemp Hooray stuffing (or a mix of the two!)
  • 4 Tbsp. butter or olive oil
  • 1 medium onion, chopped
  • 3 celery stalks, chopped
  • 1 tsp. rosemary, dried
  • 2 tsp. ground sage
  • 2 tsp. poultry seasoning
  • 1½-2 cups turkey giblet broth or vegetable stock
  • 2 Tbsp. fresh parsley, chopped
  • Salt and pepper, to taste

Preheat oven to 350° F. Place Happy Campers Gluten-Free stuffing mix in a large mixing bowl. Melt butter or oil in a large skillet. Sauté onions, celery, and ½ tsp. salt for 5 minutes on medium heat. Add poultry seasoning and other herbs to bread cubes and gently stir onion mixture to combine well. Slowly pour broth or stock over the bread cubes folding everything carefully so that the bread cubes do not break apart too much. Add a little at a time just to moisten well. Taste and add salt, pepper, or more herbs to desired flavor.

Remember: these tasty flavors will intensify a bit when cooked, so don’t over-salt or -season! Scoop uncooked stuffing into a medium casserole dish and bake uncovered for 40 minutes or until nice and toasty on top. Serves 6-8. Now start eating, and enjoy! Happy holidays! 🙂

For those who love to give their tastebuds an adventure! Enjoy buckwheat’s robust richness with pecans and mushrooms!

  • 1 medium onion, chopped
  • 3 celery stalks, chopped
  • 1 cup mushrooms, sliced
  • 1 cup pecans, chopped
  • 1 tsp. rosemary, dried
  • 2 tsp. thyme
  • 1½-2 cups turkey giblet broth or vegetable stock
  • Salt and pepper, to taste

Preheat oven to 350° F. Place Happy Campers Gluten-Free stuffing mix in a large mixing bowl. Melt butter or oil in a large skillet. Sauté onions, celery, mushrooms, and ½ tsp. salt for 5 minutes on medium heat. Add all the herbs to bread cubes and gently stir onion mixture to combine well. Kiss Me Garlic Rosemary, xoxo

Happy Campers Bakers | Posted October 3, 2015

gluten-free garlic rosemary bread

Wow, is it October already? Didn’t summer just start? Whew…guess that happens when you’ve been super-busy baking up a storm! 🙂 In the past several months, we’ve never been happier: we’ve received innumerable store requests for our bread from all over the country, broken our own bakery records left and right, and pretty much been making as many loaves for you as is literally possible for us to make! Basically, our ovens love you very much.

But here’s the particularly exciting part: we’re still just getting started. Because you’ve been so amazing at officially requesting us at your favorite food stores and spreading the good word about us, we’re getting serious about baking even more loaves. Portland has never made more tasty Happy Campers toast than now. Seattle is hungry and recently loaded up. Next: an impending bread-bombardment toward Northern California….

So, for the first time since we’ve started this wonderful adventure, we’re finally moving into a bigger bakery, woohoo! As we navigate the transition, we’ll need to slightly change a few production workflows to ensure we can get all those loaves to you in plenty new places. As a result, we’re a little sad to announce a small change to our product lineup:

If you love our Kiss Me Garlic Rosemary loaf — this is the last time you’ll be able to enjoy it for quite a while! We will be baking our last batch of Kiss Me Garlic Rosemary on Monday (October 5th), so make sure to order some before then! (We regret to inform you that after this date, you may consequently experience a higher frequency of vampires. Sorry about that.) We know many of you love our rosemary garlic loaf dearly, and are so glad you have been enjoying it. (We love it too — it’s one of our very original breads, and we hope to bring it back as soon as we can!) We’ll try to bake our last batch extra-tasty for you!

We will also be retiring our two stuffing mixes this season — we know, we know, just before Thanksgiving :/ — but fear not! You’ll still be able to make a tasty batch of stuffing yourself using toasted and dried Classy Slice, Hemp Hemp Hooray, or Stompin’ Good Seedy Buckwheat Molasses. This way, you can make as much or as little as you like! And, of course, you’re always encouraged to give our own tasty home-stuffing recipes a try. 😛

We want to bake all the super-nutritious, greatest-tasting loaves for you and your friends and your friends’ friends. We want to help everyone eat well and live well, and end the quest for truly good gluten-free bread once and for all!

In the meantime, please join us in bidding a fond farewell to our last batches of Kiss Me Garlic Rosemary…. And know that colossally delicious and deliciously colossal things are afoot! 😀

Announcing NEW BREAD: Hemp Hemp Hooray!

Happy Campers Bakers | Posted November 24, 2014

Hello, Happy Campers! We couldn’t be more delighted to announce that our bakery has a new family member! Say hello to our brand new loaf:

”Hemp Hemp Hooray!”

hemp loaf announcement

Upon taking our first mouthwatering bite, we were so excited about how tasty it was that we immediately named it after how we felt! Such deliciousness tastes even better after months of hard work—we’ve been busy in the bakery tinkering with our recipes and awesome ingredients, experimenting with new ways to make something we already loved into something new and even better!

But before you say, “Whoa, now, don’t you go changing my favorite bread on me!”, rest easy. We didn’t exactly reinvent the wheel here. (That would be downright silly, because we make bread, not vehicular components.) Instead, we started with the foundation of the delicious loaves you know and love, and made a handful awesomely nutritious additions. So, what’s extra-special about this bread? A few smiles here, a couple winks there, and even more superb healthiness! As always, we hand-bake every loaf with organic, 100% non-GMO ingredients—including our special mix of nutrition-packed, whole seed flours. Seeds are one of the best-kept secrets when it comes to so much nutrition in such a small package! So….

We added a plentiful sprinkling of flavorful hemp seeds (surprise!) throughout the loaf, adding all sorts of healthy goodness in every bite. Each slice  is full of heart-healthy Omega-3s, making your hugs extra-strong! Hemp has all the essential amino acids, making it one of the best sources of whole, plant-based protein. Additionally, hemp has no known allergens, so of course our new loaves are—like all our others—awesomely allergen-free!

Of course, everyone knows that a hero needs a sidekick, so we also added plenty of millet seeds along with the hemp seeds. These tiny bits of crunchy goodness are chock-full of vitamins and rich in minerals, and are sure to make your high-fives even more satisfying! Boom.

But our favorite part about all of this is that there are no sugars in this loaf! Like, zero. None. Nada. Its satisfying, light nutty flavor makes it so delectably delicious, we just didn’t want to mess with a good thing!

Basically, this loaf is perfect for any of your favorite delicious Happy Campers creations! A scrumptious sandwich with chicken, sundried-tomato, asparagus, and pesto? Done. How about The savory simplicity of a Happy Campers grilled cheese? You bet! Fresh, out of the bag? Of course. Hot and toasted? OM NOM NOM. (…Okay, okay, sorry. We apologize if we made you drool a little.) We’re always working hard on getting them closer to more of you—our ovens are baking overtime! 🙂 Of course, if you’re so hungry you can’t wait — you can order some online right away!

We’re really proud of our new bread, and hope you like eating it as much as we love smelling it from our ovens! Now, go get some and enjoy! 😀

Along with our delicious stuffing, we’re super-excited to also offer our new Hungry Holiday Rolls for your holiday feasts! If you want to feature them on your holiday table, here’s how to prepare them fast and easy:

  • And…done! Fresh-baked taste, ready to add to your festive feast!
