Even Happier Campers: New Bread Is Here!

Hello, all you Happy Campers!

As you might have noticed, things have gotten a little quiet around here recently…but now, at long last, it’s time to reveal what we’ve been working on for the last handful of months! Spring is in full swing, and we just can’t wait any longer to share our excitement….

We’re very proud to announce that we have NEW BREAD! (Click here to watch our video!) We’ve loved baking some of the healthiest, best loaves we could for all of you, but we knew we couldn’t just leave it at that! So, we set out to make it even better for everyone—it’s more nutritious, and tastier for anyone who simply loves amazing bread.

…So, what’s new about it?

All-organic seed flour!

Seed Flours

Our new bread is still soy- and gluten-free and vegan—of course!—but now it’s also potato- and grain-free! Instead of grains, like rice and corn, we baked it for you with nutrition-packed, all-organic, whole seed flours. Now, we know what you’re probably thinking. Seed flours? Why seeds? Aren’t those the tiny things I feed to birds, or find silently decorating the top of my hamburger bun? Well, sure, but don’t judge them by their size! Seeds are one of the best-kept secrets when it comes to the amount of nutrients in such a small package. (Well…not anymore!) They may be small, but they’re some of the most nutrient-dense foods we can eat—much more than whole grains! In every slice of a Happy Campers loaf, you’re getting a ton of essential nutrients from the healthy variety of teff, millet, quinoa, amaranth, and buckwheat!

Teff
• Teff offers decently high-quality protein.
• Remarkably rich in iron, calcium, magnesium, zinc, and B vitamins.

 

Millet
• A small, round, yellow seed, millet is was planted by the Chinese even before they began farming rice!
• It’s a great source of magnesium, as well as the B vitamins niacin, folacin, thiamin, and riboflavin.

Quinoa
• Called “the mother grain” by the Incas, quinoa is a super-seed: a complete protein source, containing all nine essential amino acids.
• Quinoa is also an excellent source of B vitamins, Vitamin E, iron, and phosphorus.

Amaranth
• Amaranth means “everlasting” in Greek—indeed, this seed has been cultivated for over 8,000 years.
• It’s a nutritional powerhouse, containing more protein than any other gluten-free grain or seed—and even wheat!

Buckwheat

• Buckwheat is a complete protein; rich in iron, selenium, and zinc, as well as several B vitamins.

 

Don’t worry—none of your favorite flavors have gone anywhere! You’ll still find Classy Grains, Kiss Me Garlic Rosemary, and Party Hearty right where you expect. It was our goal when working on this new recipe to keep flavor exactly the same and improve everything else. We use whole seed flours and bakers yeast for the true-bread flavor and smell all of us were seemingly born to love. We use the same spices like Garlic, Rosemary and Cumin to add that extra special flavor. Because we now use different flours, you may detect a slight difference in flavor, but most people can’t even tell. And don’t be fooled—just because our new loaves are lighter certainly doesn’t mean you’re getting less nutrition! In fact, it’s quite the opposite! Each slice has twice the amount of protein and fiber as our original recipe.

And the texture is fantastic!—the softness on a sandwich or the crunch of hot toast has never been better! When you pull out a fresh slice, it’s soft and tender, but doesn’t crumble at all. When you toast it, you get the best of both worlds: it’s both soft and crunchy at the same time! You also don’t have to toast fresh slices for as much time as you used to—and you can do it straight from the bag or the freezer! Delicious perfection? We like to think so, but our mouths are currently too full to say much of anything….

“It’s the best thing since….”

You asked, and we sliced! We figure that when you want some Happy Campers bread, you don’t want to waste the time to slice it when it should already be in your mouth! The convenience of grabbing a couple of slices and throwing together a sandwich has been appreciated by bread-eaters ever since 1928, when the Chillicothe Baking Company first offered sliced bread for sale in Chillicothe, Missouri (true story!). Slicing our loaves has been probably the #1 comment we’ve been getting from you, so here they are, pre-sliced and ready for any and every occasion. Breakfast? Check. Second breakfast? Check. Elevensies? Check. Camping, bicycling, picnics? Check. Riding a moose? Check.

Basically, this bread is yummy and amazing for pretty much anything!

Want to stock up up some Happy Campers for a rainy day? Just throw a loaf (or more!) in the freezer so you can enjoy some slices whenever you want them. You can still do everything you’re used to doing with your Happy Campers loaf as far as freezing, thawing, and toasting, but there are a few improvements: because of the pre-slicing, you can pull one slice at a time straight from the fridge or freezer (you might need a butter knife to pull away frozen-together slices). Freezing and thawing also doesn’t change the texture of the bread nearly as much. After thawing it out, you can still enjoy it straight from the bag without toasting. When you toast, you’ll get a great fresh taste—every time.

It wasn’t long ago that gluten-free bread used to be only for people who couldn’t eat gluten. (Heck, much of the gluten-free bread out there is still that way!) While that still holds true, of course, it’s important to realize that everybody will benefit from high-quality food that is packed with nutrition and ingredient variety.

Even if you’re not gluten-intolerant or -sensitive, you can enjoy both delicious and healthy bread that won’t spike your blood-sugar or load you up with stuff you don’t want in your body. Being free of gluten, wheat, eggs, dairy, soy, rice, corn, and other common grains; you’ll be sure to get amazing variety in diet. When’s the last time you had some teff, millet or quinoa seeds, or sweet potato? And what’s the last time you had something with rice? The rice was today, wasn’t it? 🙂 Not eating the same thing over and over will make you feel better!

Our biggest challenge was not only to improve the quality of the ingredients and nutrition, but also to make it just as delicious and enjoyable for anyone—no matter what their health preferences! Gluten-intolerant? We’ve got you covered. Vegan? You’ll love it. Sensitive to soy or potato? Look no further. Just want to eat healthily? You’ve certainly come to the right place!

    I would love to try the buckwheat, but I need to know all the nutrients in each slice in order to do that. I have CKD and cannot eat too much of certain nutrients. Is there any way you have this information? There are about 26 million of us who have this disease.
