Q: Who is this bread for?
For everyone and everybody who wants to eat delicious, truly healthy food! You, your kids, your better half, your mom, your grandpa, your cousin, your neighbor, your dog, your moose…we could go on forever! Our wide array of healthy and organic ingredients will ensure you get plenty of energizing nutrition. Being free of gluten, wheat, eggs, dairy, soy, rice, and corn, you’ll be sure to get amazing variety in diet. What’s the last time you had some amaranth, millet, or quinoa seeds? And what’s the last time you had something with rice? Not eating the same thing over and over will make your body feel better!
Q: What are seed flours, and why do you bake with them?
There are many types of flour milled from a wide variety of grains, nuts and seeds. In our bread we use a special flour mix with multiple kinds of seeds: quinoa, amaranth, buckwheat, millet. There are severeal reasons we decided to go for seed flours! They have denser nutrition than grains, and they provide a really healthy variety to your diet. It’s easy for gluten-free folks to get stuck eating only a few kinds of grains over and over again — especially rice!
Q: Do your loaves come pre-sliced?
Yes, indeed! Because — let’s be honest — healthy Happy Campers sliced bread is one of the best things since, well, sliced bread! The convenience of grabbing a couple of slices and throwing together a tasty sandwich has been appreciated by bread eaters ever since 1928, when the Chillicothe Baking Company first offered sliced bread for sale in Chillicothe, Missouri (true story!). If you prefer custom thickness, please stop by one of our many farmers’ markets (weekends), where you can get a whole loaf straight from us!
Q: Why doesn’t it say 'organic' on the package?
It is very expensive to certify products as ‘organic’; although, we’re very happy to say that most of the ingredients we use are 100% organic! Even if we officially mention the word ‘organic’ on the front label you have to go through the same certification process. As we continue to grow, we’ll hit up the certifiers, but until we can afford it, check out our ingredient list to know which ones are organic.
Q: Why are only some ingredients organic and not all?
Finding reliably gluten-free and organic ingredients is a tough nut! As our global community continues to support organic (and gluten-free), more and more farmers are making the switch, and we’ll be there to buy it and make it into delicious bread! Our goal is to get as 100% organic as possible — and we’re really close. We’ll continue to our transition to 100% organic, so be sure to keep checking the ingredients for updates!
Q: How does it freeze/refrigerate?
Splendidly! You can do everything you’re used to doing with your bread as far as freezing, thawing, and toasting. Because of the pre-slicing, you can pull one slice at a time straight from the fridge or freezer (you might need a butter knife to pull away frozen-together slices). Freezing and thawing also doesn’t change the texture of the bread nearly as much. After thawing out from frozen state, the slices may not hold up to your sandwich quite as well as when they were fresh, but you can still enjoy it straight from the bag without toasting. When you toast, you’ll get a great fresh taste and every time.
Q: How does it do stored on the counter?
You may be familiar with this phrase: “Leave it on the counter and let the freshness surprise you.” If this is what we used to suggest for storage tips of our original recipe, we should now say: “Leave it on the counter and let the freshness BLOW YOUR MIND!” The recipe will stay great and fresh until the very last day of its Best By date, after which, nature inevitably sets its course and the bread will start to mold. This appears 6-7 days after we deliver it to your store.
Q: Can I use it to make a sandwich?
You’d better believe it! (Why not make two?)
Q: How good is it toasted?
Out of this world! — the perfect combination of softly chewy and deliciously crunchy. You can toast fresh slices or straight from the fridge or freezer.
Q: Is your bread 'Paleo'?
The true Paleo diet is based on food that humans ate prior to agriculture. It is based on meats, veggies, nuts, seeds, berries and some fruit. We make our breads with grass seed flours like millet, teff, buckwheat, quinoa and amaranth. These seed flours, however, are available to us because we grow and harvest them. As such, our bread is technically NOT Paleo. From our research, however, we found that people follow various types and degrees of paleo diets. Our bread is in line with the most important Paleo food standards: it’s gluten-, dairy-, egg-, and soy-free; and has no added sugar. So, you could probably call it ‘Paleo-ish’!
Q: Why should I eat THIS bread?
Good question! Because you want to feel good; you want to take care of yourself; you want to nurture and energize your life!
It’s the only gluten-free bread that’s 1) extraordinarily tasty, 2) made with high-quality ingredients, and 3) full of an abundance of smiles! 🙂

Q: The loaves feel so light! Am I getting enough nutrition?
Don’t be fooled—just because our new loaves are light certainly doesn’t mean you’re getting less nutrition! In fact, it’s quite the opposite! Amaranth is a nutritional powerhouse, packing in more protein than any other gluten-free grain—and more protein than wheat! Quinoa is a super-seed: a complete protein source, containing all nine essential amino acids. Teff is remarkably rich in iron, calcium, magnesium, and zinc. Millet is also an excellent source of fiber and contains many B-complex vitamins. Buckwheat is…. Well, we could go on, but you get the idea.
