Follow the directions in the Bread video. You just need to: 1) Change water to 352 grams (1 1/2 Cups + 2 Tbsp), 2) Add Hemp Seeds (39g = 4 Tbsp), 3) Add Millet Seeds (18g = 1 1/2 Tbsp)
BUCKWHEAT MOLASSES
Follow the directions in the Bread video with these changes: 1) Change Water to 342 grams (1 1/2 Cups + 1 Tbsp), 2) Change Bread Mix to 240g (1 3/4 Cups), 3) Add Buckwheat Flour (60g = 1/2 Cup), 4) Add Tapioca Flour or Starch (60g = 1/2 Cups), 5) Add Sunflower Seeds (46g = 1/3 Cup), 6) Add Millet Seeds (37g = 3 Tbsp), 7) Add Flax Seeds (9g = 3 tsp), 8) Add Molasses (30g = 1 1/2 Tbsp)
CRAVIN’ RAISIN
Follow the directions in the Bread video with these changes: 1) Change Water to 330 grams (1 1/2 Cups), 2) Add Sugar (75g = 1/3 Cup), 3) Add Raisins (60g = 1/3 Cup), 4) Add Cinnamon (8g = 3 tsp), 5) Add Cardamom (1g = 2 pinches). After 30 min of baking, reduce temperature to 325F and bake for 1 more hour (so total bake time is 1.5 hrs). This is needed so the top doesn’t burn. To substitute Maple Syrup for Sugar, use 155g Maple (1/3 Cup) and 292g Water (1 1/3 Cups). To substitute Honey for Sugar, use 92g Honey (1/3 Cup) and 314g Water (1 1/3 Cups + 2 Tbsp).

Flour mix arrived this afternoon and a loaf just came out of the oven. My bread pans are a bit larger than prescribed, but it turned out amazing!
I followed the recipe exactly, except for the part about waiting 2 hours for slicing because my wife hasn’t had fresh from the oven warm bread for many, many years. I’m going to try the milled and hemp addition for the next. I’d really have to stretch to find anything I don’t like about this. Salt was light, but that’s completely subjective. A drier crumb would be more versatile-but I’m sure you’ve experimented with less moisture/oil and found the right balance between texture and moisture.
I’ve tried piles of gluten-free flours and never had a result this good. Nothing even close. Really, really amazing product!

It was SO good. My husband who is usually gluten free has recently been eating Dave’s Killer Bread to have a COVID timed break from GF bread said that it was far better than Dave’s and he will be switching to this. It is positively delicious, my kids want it all day long. It’s what my son wants for breakfast, lunch, dinner and snacks on his birthday.
I used the handheld electric mixer. The dough kept going up the mixer so I just used my hands for a minute or two. I don’t believe this had any impact on the end result. I also baked it for 52 min and it seemed to be done.
I will be buying the mix almost exclusively in the future 🙂
