RECIPE:
- ๐ฅ 6-8 slices of Happy Campers Bread Butts bread!ย
- ๐ฅย 6-8 medium/large carrots
- ๐ฅย ยผ cup GF Tamari Sauce (low sodium)
- ๐ฅย ยผ cup Apple Cider Vinegar (Braggs)
- ๐ฅย ยผ cup Vegetable Broth (low sodium)
- ๐ฅย 2 Tbs Maple Syrup
- ๐ฅย 1 Tbs Liquid Smoke
- ๐ฅย 1 tsp Yellow Mustard
- ๐ฅย 1 tsp Fresh Garlic (minced)
- ๐ฅย 1 tsp Pickled Jalapeno Juice
- ๐ฅย 1 tsp Onion PowderCut and peel carrots (peeling is optional) to make them "bun length'.
ย
STEPS:
- ๐ญย Boil carrots in water until just fork tender.ย About 10-15 minutes. This is a critical step, because if you over-boil your carrots, their texture will be too soft and mushy. Check with fork often after the 10 minute mark.
- ๐ญย Drain carrots, rinse with cold water, and drain again. Place carrots in a ziplock freezer bag. We really like these reusable Stasher ziplock bags. They're spendy, but they last forever and they water-tight.
- ๐ญย Whisk all marinade ingredients together and pour into bag with carrots.
- ๐ญย Marinate for at least 4-6 hrs. But we like to marinate OVERNIGHT for extra flavor!
- ๐ญย Grill carrots on an open grill, basting occasionally.ย
- ๐ญย Grill to heat all the way through and to get some blackened grill marks on each side.
- ๐ญLather up with all your favorite hot dog fixings! Ours include Sauerkraut, Yellow Mustard, Ketchup, Diced Pickled Jalapenos, Diced Red Onion, Pickles and Bitchin' Sauce. For the side, we love cubed watermelon (chilled) tossed with fresh cut mint leaves! Yum yum yum! ๐
Enjoy and happy munching!!! ๐๐
