Step 1 (for both recipes): Make Happy Campersย BREAD CUBES
- Cut slices of your favorite flavor(s) of Happy Campers bread into ยฝ-1โณ cubes.
- Spread the bread cubes in a single layer on a large baking sheet.
- Leave on the counter overnight uncovered to dry
Or bake at 225F for 45 minutes until dry
Or bake at 400ยบF on the center oven rack for 12-15 minutes. until dry and toastyย

Step 2: Make the Stuffing!ย

Recipe #1:
Our classic family recipe we make every year. Serves 6-8:
- 1 loafโs worth ofย Classy Sliceย orย Hemp Hemp Hoorayย bread cubesย
- 4 Tbsp. olive oil
- 1 medium onion, chopped
- 3 celery stalks, chopped
- 1 ยผ tsp rosemary, dried
- 2 ยฝ tsp ground sage
- ยฝ tsp ground thyme
- ยฝ tsp ground marjoram
- โ tsp ground nutmeg
- 1ยฝ โ 2 cups vegetable stock (to make this a vegan gluten free stuffing recipe) or use a broth of your choice (like turkey giblet)
- 2 Tbsp. fresh parsley, chopped
- Salt and pepper, to taste
- Preheat oven to 350ยฐ F.ย
- Place Happy Campers Gluten-Free bread cubes in a large mixing bowl.ย
- Sautรฉ onions, celery, and ยฝ tsp. salt for 5 minutes on medium heat in Olive Oil.
- Add seasoning to bread cubes and gently stir onion mixture in to combine well.ย
- Slowly pour stock or broth over the bread cubes folding everything carefully so that the bread cubes do not break apart too much.ย
- Taste and add salt, pepper, or more herbs to desired flavor.
- These tasty flavors will intensify when cooked, so donโt over-salt or -season!ย
- Scoop into a medium casserole dish and bake uncovered for 40 minutes or until nice and toasty on top. Start eating, and enjoy!ย

Buckwheat Molasses Stuffing with pecans and mushrooms!
- 1 loafโs worth ofย Buckwheat Molassesย bread cubes
- 4 Tbsp. butter or olive oil
- 1 medium onion, chopped
- 3 celery stalks, chopped
- 1 cup mushrooms, sliced
- 1 cup pecans, chopped
- 1 tsp. rosemary, dried
- 2 tsp. thyme
- 1ยฝ โ 2 cups vegetable stock (to make this a vegan gluten free stuffing recipe) or use a broth of your choice (like turkey giblet)
- Salt and pepper, to taste
- Preheat oven to 350ยฐ F.ย
