Happy Campers Holiday Gluten Free Stuffing Recipe!

Well, it’s that time of year again! Whether you stuff your turkey, tofu or yourself, we hope these recipes put a smile on your face and in your belly! Wherever you are, we wish you the happiest (and tastiest) of holidays! 

Step 1: Make Happy Campers bread cubes

  1. Cut slices of your favorite flavor(s) of Happy Campers bread into ½-1″ cubes.
  2. Spread the bread cubes in a single layer on a large baking sheet.
  3. Leave on the counter overnight uncovered to dry

Or bake at 225F for 45 minutes until dry

Or bake at 400ºF on the center oven rack for 12-15 minutes. until dry and toasty 

Step 2: Make the Stuffing! 

Recipe #1: Our classic family recipe we make every year. Serves 6-8:

  • 1 loaf’s worth of Classy Slice or Hemp Hemp Hooray bread cubes 
  • 4 Tbsp. olive oil
  • 1 medium onion, chopped
  • 3 celery stalks, chopped
  • 1 ¼ tsp rosemary, dried
  • 2 ½ tsp ground sage
  • ½ tsp ground thyme
  • ½ tsp ground marjoram
  • â…› tsp ground nutmeg
  • 1½ – 2 cups vegetable stock (to make this a vegan gluten free stuffing recipe) or use a broth of your choice (like turkey giblet)
  • 2 Tbsp. fresh parsley, chopped
  • Salt and pepper, to taste
  1. Preheat oven to 350° F. 
  2. Place Happy Campers Gluten-Free bread cubes in a large mixing bowl. 
  3. Sauté onions, celery, and ½ tsp. salt for 5 minutes on medium heat in Olive Oil.
  4. Add seasoning to bread cubes and gently stir onion mixture in to combine well. 
  5. Slowly pour stock or broth over the bread cubes folding everything carefully so that the bread cubes do not break apart too much. 
  6. Taste and add salt, pepper, or more herbs to desired flavor.
  7. These tasty flavors will intensify when cooked, so don’t over-salt or -season! 
  8. Scoop into a medium casserole dish and bake uncovered for 40 minutes or until nice and toasty on top. Start eating, and enjoy! 

Recipe #2: Buckwheat Molasses Stuffing with pecans and mushrooms!

  • 1 loaf’s worth of Buckwheat Molasses bread cubes
  • 4 Tbsp. butter or olive oil
  • 1 medium onion, chopped
  • 3 celery stalks, chopped
  • 1 cup mushrooms, sliced
  • 1 cup pecans, chopped
  • 1 tsp. rosemary, dried
  • 2 tsp. thyme
  • 1½ – 2 cups vegetable stock (to make this a vegan gluten free stuffing recipe) or use a broth of your choice (like turkey giblet)
  • Salt and pepper, to taste
